茶叶末釉是我国古代铁结晶中重要的品种之一,属高温黄釉,经高温还原焰烧成。釉面呈失透状,釉色黄、绿掺杂,绿者称茶,黄者称末,古朴雅致,颇似茶叶细末,俗称“茶叶末”。许之衡《饮流斋说瓷》说到:“各种黄色……若和黑、绿二色者,则名茶叶末。”此釉称为茶叶末,是因为在暗绿色的底釉中有许多黄色星点,犹如将茶叶末调在釉里。经研究,茶叶末釉面星点的形成,是釉中的铁、镁与硅酸化合而产生的结晶。
